We love potato salad. Do you? This old fashioned potato salad with eggs and mustard in the mix is quick and easy to make. So perfect when you are in a hurry. With potatoes that are cooked just right, then mixed with a creamy full flavor dressing, the taste is just like when great grandma made potato salad.

This is a simple recipe with only nine main ingredients – potatoes, hard boiled eggs, celery, onions, sweet relish, mayo, yellow mustard, and salt and pepper for the seasonings.

The Potatoes

  • 4 large potatoes
  • 1 tablespoon of salt

  • 3 hard-boiled eggs

The Mayonnaise Mixture

  • 3/4 cup of celery (about 2 stalks)
  • 1/4 cup of chopped onion
  • 1/4 cup sweet pickle relish
  • 1 teaspoon of salt
  • 1/8 teaspoon black pepper
  • 3/4 cup of mayonnaise
  • 1 tablespoon of yellow mustard

👩‍🍳 How to Make Potato Salad with Eggs and Mustard

These step-by-step instructions are accompanied by detailed photos for enhanced clarity and guidance.

Step 1. Prepare the Potatoes

Peel the 4 potatoes and then chop them into bite-sized cubes, about 3/4 inches in size. They do not need to be the same size, but close to it, to ensure the potatoes cook evenly. There are a variety of potatoes you can use, such as Russet potatoes, red potatoes, or Yukon gold potatoes.

Then, put the cut-up potatoes in a medium-sized saucepan and fill the pot with cold water just above the level of the potatoes.

Step 2. Boil the Potatoes

Turn the burner on high heat. Bring the water to a boil, then add 1 tablespoon of salt to the water and stir. Then turn the burner down to medium heat and cook until potatoes are tender.

The cooking time for our potatoes was 14 minutes, and we stirred them occasionally. You can do a potato check with a fork or toothpick. The fork or toothpick should be able to slide into the potatoes with ease, but not make the potatoes fall apart or break up.

Step 3. Drain the Potatoes

After the potatoes are done cooking, drain the water out of them using a colander over the sink. You can use a colander or just pour the water out of the pot using a lid. Put the potatoes in the refrigerator for now.

Step 4. Chop the Hard-Boiled Eggs, Dice the Celery and Onions

Prepare the hard-boiled eggs. When the eggs are done, cut them into slices. After that, dice 3/4 of a cup of celery, which is about 2 stalks. Then chop 1 small onion. If you love onions and have a little more than the 1/4 cup this recipe calls for, you can just throw the rest of the onions in with the other ingredients, same goes for the celery too.

Step 5. Combine the Ingredients for the Mayonnaise Mixture

In a medium-sized bowl add the hard-boiled eggs together with the celery, chopped onion, sweet pickle relish, salt, pepper, mayonnaise, and yellow mustard. Mix it all up together with a fork, spoon, or spatula.

Note: You can use any of your favorite brands of mayonnaise such as Miracle whip, Best Foods, or Kraft mayonnaise. We used Best Foods.

Step 6. Mix the Cooked Potatoes with the Mayonnaise Mixture

Add the cooked potatoes we set aside earlier together with the mayonnaise mixture and mix well. Fold the ingredients together carefully so the potatoes won’t turn into mush.

Step 7. Chill the Potato Salad

Cover the bowl with a lid or plastic wrap and then put it in the refrigerator to chill for a couple of hours before serving. Store any leftovers in the refrigerator. If stored properly, it can last 3 to 4 days in the refrigerator.

Should Potatoes Be Cooled Before Adding Them to the Potato Salad?

Potatoes should be cooled to at least room temperature, but chilling the potatoes in the refrigerator before adding them to the mayonnaise mixture is even better unless you are making a hot potato salad.

Is it Better to Boil Potatoes Whole or Cut Them Up When Making Potato Salad?

Through experience, it is better to peel and cut the potatoes first, then boil them. It is harder to cut the potatoes into bite-sized cubes after they are already cooked. They could turn into a mushy mess.

What Else Can You Add to Potato Salad?

Some potato salad recipes include a little bit of vinegar, apple cider vinegar, dice-up dill pickles, or a little pickle juice or dill pickle relish instead of sweet relish to add a unique and tangy twist to it.

Some other potato salad ingredients you can add if you choose to are celery seed, and red or green bell peppers to make a delicious potato salad like no other.

Southern potato salad can also be served warm, or have apple cider vinegar, minced garlic, sugar, and/or sour cream added to them.

  • Peel potatoes. Cut into approximately 3/4-inch cubes.
  • Put potatoes in a pot. Add cold water covering the potatoes about 1-inch.
  • Turn the burner to high heat. Bring the water to a boil. Add the table salt to the water and stir. Then turn the burner down to medium heat and cook until potatoes are tender, about 14 minutes, stirring occasionally.
  • Poke the potatoes with a fork or toothpick to check if done. It should slide into the potatoes but not make the potatoes fall apart.

  • Hard-boil the eggs. Cut into slices.
  • Chop the celery into pieces.
  • Chop the onions into pieces.

The Dressing

  • Stir together the hard-boiled eggs, celery, onions, sweet relish, salt, pepper, mayonnaise, and yellow mustard.
  • Fold the potatoes into the dressing mixture. Be careful not to smash the potatoes.
  • Put a lid on the potato salad and put it in the refrigerator to chill for a couple of hours before serving.
