This pepper steak recipe has onions, yellow, red, and orange bell peppers that are all cut into strips and simmered in soy sauce for about 50 minutes, then topped with tomato slices, simmered for a few more minutes, and then served over a bed of white rice.
Ingredients for Pepper Steak Recipe
- 2 tablespoons of vegetable oil
- 2 pounds of sirloin steak (or your choice of steak)
- 1/8 teaspoon of salt
- 1/8 teaspoon of black pepper
- 1/4 teaspoon of Lawry’s seasoned salt
- 1/8 teaspoon of garlic salt
- Water (about 3 cups)
- 1 medium onion
- 1 yellow, 1 red, and 1 orange bell pepper
- 2 tablespoons of soy sauce
- 2 tablespoon of corn starch
- 4 medium tomatoes
- 1 and 1/2 cups of uncooked white rice
Step-By-Step Instructions With Photos
Preparing The Steak
To begin with, trim and discard any fat from the steak, then cut the sirloin steak into strips.
Then, put 2 tablespoons of vegetable oil in a frying pan on medium-high heat and add the steak strips. Sprinkle 1/8 teaspoon of salt together with 1/8 teaspoon of black pepper, 1/8 teaspoon of garlic salt, and 1/4 teaspoon of Lawry’s seasoned salt over the top of the steak.
The steak should be browned for about 20 minutes on medium-high heat or until the steak is browned to your liking.
Cutting Up The Vegetables For Pepper Steak
While the steak is browning for 20 minutes, cut the onion, the yellow, red, and orange bell peppers into slices, and cut the 4 tomatoes into fourths.
Add about 2 cups of water (will need more water later) to the frying pan, then add the cut-up onion slices over the top of the steak. Bring to a boil, then reduce the heat to medium and simmer for about 7 minutes.
Note: If you want the steak to be easier to chew, simmer the steak in the water for about an hour or more before adding any vegetables. Also, you would need to add more water.
After 7 minutes, add the slices of yellow, red, and orange bell peppers together with the steak and onions in the frying pan. Then, simmer for 20 more minutes. At this time, prepare the white rice using the directions on the package.
Note: Also at this time, if the water level is low in the frying pan, add 1 more cup of water because the water level should be touching the bottom part of the vegetables.
Preparing The Soy Sauce
While the steak mixture is simmering, put 2 tablespoons of corn starch together with 2 tablespoons of soy sauce in a small bowl. Mix all together with a spoon.
During the 20 minutes of simmering the steak mixture, be sure to check the water level. The water level should slightly cover the steak and vegetables. Add any water now if you need to. Then, slowly add the corn starch soy sauce mixture. Continue to simmer until the water thickens into a sauce.
Place the tomatoes on top of the steak, onions, and peppers during the last 5 minutes of the sauce thickening.
My family and I love the thickened sauce in this pepper steak recipe. The more you simmer the steak and vegetables, the thicker the sauce will get, which is a good thing, but we don’t want it too thick. If it does get too thick, add a little more water to thin it.
We love the taste of this pepper steak dinner. Also, not only is it a simple recipe to make, but it only uses one pan to cook it in so there’s not much time spent in the kitchen.
Pepper steak is served over a bed of white rice. Our side dish is mac and cheese. Enjoy!

- 2 tbsp vegetable oil

- Heat the oil in a frying pan on medium-high heat. Add the steak.
- Add the seasonings.
- Brown the steak for 20 minutes.
- Cut the onion, the yellow, red, and orange bell peppers into slices, and the tomatoes into fourths.
- Add the water and the onion slices to the frying pan.
- Bring to a boil, then reduce the heat to medium. Simmer for about 7 minutes.
- Add the slices of yellow, red, and orange bell peppers to the frying pan.
- Simmer for 20 more minutes. If the water level is low in the frying pan, add more.
- While that is simmering, prepare the white rice using the directions on the package.
- Mix the corn starch together with the soy sauce.
- The water level should slightly cover the steak and vegetables. Add water now if needed. Slowly stir in the corn starch soy sauce mixture. Continue to simmer until the water thickens into a sauce.
- Then, place the tomatoes on top for the last 5 minutes of simmering until heated through.

- The longer you simmer the steak in water before adding any vegetables, the tenderer it will be.
