Step-By-Step Instant Pot Chuck Roast Instructions with Photos
Add about 1 tablespoon of olive oil to the bottom of the instant pot. We used olive oil, but other vegetable oil can be substituted.
Cut the chuck roast into block-sized chunks and place the chunks of roast into the instant pot.
Set the instant pot on saute and brown the chunks of chuck roast on all sides for approximately 10 minutes. It is okay if some pink is still showing in the meat.
Cut 3 Yukon gold potatoes in fourths leaving the skins on the potatoes. You can, however, substitute your favorite kind of potatoes and remove the peeling if you want.
Do the same for the 3 red potatoes, cutting them into fourths and leaving the skins on.
Place all of the potatoes over the chuck roast in the instant pot.
Cut 1 yellow onion into chunks. You can also cut the onions however you want to, but the smaller you cut them, the mushier they become.
Scatter the onions on top and all around the potatoes and together with the chuck roast in the instant pot.
Beef Broth
Now we are going to make the beef broth mixture: Mix 4 cups of beef broth together with 2 tablespoons of Worcestershire sauce, and 1 tablespoon of corn starch.
Then, add 1 teaspoon of salt, 1 teaspoon of onion powder, and 1 teaspoon of garlic powder together with the beef broth mixture and pour the mixture over the chuck roast, potatoes, and onions.
Set the instant pot on manual for 70 minutes.
After the chuck roast has cooked for 70 minutes, add 1 small bag of raw baby carrots, 1 can of corn, and 1 can of green beans together with the roast, potatoes, and onions.
Put the lid back on the instant pot, then press the manual button and set it for another 10 minutes to make the raw baby carrots tender, and to heat the corn and the green beans.
If you have the bigger longer raw carrots, you will have to adjust the manual time. Maybe instead of 10 minutes, you could try 15 minutes and then check to see if the carrots are tender.
After the last 10 minutes are done, take the lid off of the instant pot, and the chuck roast is ready to serve.
Final Thoughts
Tender chuck roast ready to serve with a flavorful beef broth seasoning mixture, potatoes, carrots, corn, onions, and green beans. A meal in itself, and not much time spent in the kitchen, except when it’s time to eat it. Enjoy! Also, try our delicious brownie recipe for dessert, you will be glad you did.
