👩‍🍳 How to Make Chocolate Covered Strawberries

These step-by-step instructions are accompanied by detailed photos for enhanced clarity and guidance.

Step 1. Wash the Strawberries

When buying strawberries, look for good quality, firm, bright red strawberries, with no soft spots, or mushy areas on the berries. Turn them over, check the whole strawberry to make sure no mold or icky stuff is growing on them.

Put about 15 fresh strawberries in a colander, then put the colander in the sink. After that, run cold water from the faucet over the strawberries for a few minutes. No colander, no problem, just rinse the strawberries in a bowl, then drain the water from the bowl.

Shake the excess water from the colander, then lay the strawberries on a paper towel for a few minutes to dry. You can also pat them lightly with the paper towel to get rid of the excess moisture on them.

Tip: You can remove the stem if you prefer to do so, but the top of the strawberry is where the stem is, which is also what we will hold on to when dipping the strawberries in the melted chocolate. It is also what you would usually hold on to while eating the chocolate covered strawberry. We left the stems on our strawberries.

Step 2. Melt the Chocolate Chips

Measure out one cup of semi-sweet chocolate chips.

Next, it’s time to melt the chocolate chips. A couple easy ways to do that is the microwave method, or the double boiler method. We used the microwave method.

To use the microwave method, place the chocolate chips in a small bowl. Make sure to use a microwave safe bowl. Microwave the chocolate chips at one minute intervals on power level 6 or 7, depending on your microwave’s power capacity. Keep a close eye on the chocolate chips while they are melting in the microwave.

After the first minute, stir, making sure to scrape the edge of the bowl. Repeat if necessary with this guild line: one minute on power level 6, then stir, then another minute at the same power level until the chocolate chips are completely melted.

Note: During the second minute, you can do 20-30 second intervals to prevent scorching and over microwaving the chocolate chips if you have a high-powered microwave. Keep repeating until the chocolate chips are completely melted.

Tip: A double boiler is one smaller pot that sits atop a slightly bigger pot below. The contents to be cooked is in the top pot, and water is put in the bottom pot. When you turn on the burner, it heats the water in the bottom pot, thus heating the contents in the top pot. The whole idea behind this technique is to not scorch the contents in the top pot. The burner does not touch the top pot or it’s contents. But, as always, make sure to keep on eye on the chocolate while it is melting if you will be using this method.

Hint: If you prefer, you can add one tablespoon of coconut oil to one cup of melted chocolate. This makes the melted chocolate shinier, thinner, and smoother. But don’t worry, refined coconut oil will not affect the flavor of the chocolate, since it has a neutral taste.

Step 3. Dip Strawberries in the Melted Chocolate

Hold one strawberry by the stem, then dip it in the warm chocolate, making sure to cover the strawberry completely. Let the excess chocolate on the strawberry run off into the bowl for a second or two, or lightly scrape the backside of the strawberry against the side of the bowl. This only takes a couple of seconds. Continue to step 4.

Step 4. Cover Chocolate Strawberries in Sprinkles

Pour some rainbow sprinkles on a plate. Rainbow sprinkles are sold in most grocery stores in your area. Then, right after dipping the first strawberry in the chocolate, cover it with the rainbow sprinkles before the chocolate coating dries.

The easiest way to do that, is to keep holding the strawberry by the stem, and using your fingers to toss some sprinkles on the melted chocolate all the while, holding the strawberry over the plate. Any excess sprinkles with fall back onto the plate, hence, no messy clean-up.

Repeat these steps with all the remaining strawberries.

Step 5. Place Berries on Wax Paper to Harden

Lay each dipped strawberry in a single layer on a lined baking sheet. A lined baking sheet means you can cover the baking sheet with parchment paper or wax paper.

After that, put the finished berries in the refrigerator to chill. Try to finish eating them within the next day or two.

🛒 Recipe Variations

  • There are many different kinds of sprinkles. Go ahead and use any of your favorites.
  • You can substitute your favorite chocolate, such as white chocolate chips, which is made with cocoa butter, milk, and sugar, without the cocoa solids. A fun thing to do is melt the white chocolate chips, and then use red sprinkles to dip them in for a special Valentine’s Day gift for your loved one. When melting white chocolate, go slow, use a low heat, and make sure to keep stirring. Use white chocolate melts (can also be called candy melts) and a double boiler to achieve the best results.
  • Try using dark chocolate, including unsweetened, and bittersweet, if you like the taste of those.
  • If you have any remaining melted chocolate, dip a graham cracker square in the leftover melted chocolate for a delightful, tasty treat.

🙋 FAQs

What do I do with Leftover Chocolate Covered Strawberries?

Storage Tip: You can store the chocolate-covered strawberries on the countertop at room temperature in an airtight container for a few days. A cool place on the countertop is preferred, but these chocolate covered strawberries are at their best when you put them in the refrigerator.

Can I Freeze Chocolate Covered Strawberries?

Yes, you can freeze chocolate covered strawberries, but be aware that freezing them can change the taste and texture of the strawberries. When completely thawed, the strawberries will be mushy. However, they are best eaten while frozen, or just partially thawed.

To freeze, line a baking sheet with parchment paper, then lay each chocolate covered strawberry on it in a single layer. Make sure they don’t touch each other. Place chocolate covered strawberries, baking sheet and all, in the freezer until frozen, then transfer them to an airtight container or freezer-safe bag. This method assures the chocolate covered strawberries won’t freeze to each other.
