Banana Bread with Cream Cheese and Chocolate Chips
Flo
Featuring cream cheese and chocolate chips, this banana bread recipe is extra moist and delicious. The cream cheese enhances the moistness and flavor, while the addition of chocolate chips transforms it into a delightful indulgence.
Put the butter in a microwave-safe bowl, then microwave it for 20 seconds, just enough to soften the butter.
In a large bowl combine the melted butter, cream cheese, and sugar. Mix together with an electric hand mixer until it is fluffy.
Add the eggs, one at a time, to the melted butter, cream cheese, and sugar mixture. Mix together using the electric hand mixer.
Mash the ripe bananas with a fork, but not into mush. We want to be able to see small pieces of bananas in the banana batter.
Add the mashed bananas and vanilla extract to the melted butter, cream cheese, and sugar mixture. Mix together. Set aside for now.
In a different bowl, add the flour, salt, baking powder, and baking soda. Mix well.
Slowly, a little at a time, add the flour mixture to the banana bread mixture. Mix thoroughly.
Coat the loaf pans with non-stick cooking spray.
Separate the banana bread mixture evenly into the loaf pans.
Sprinkle dark chocolate chips and white chocolate chips on top of "one" loaf pan of banana bread. Mix together.
Use the heat-resistant oven mitts to place both loaf pans in the preheated oven at 350-degrees Fahrenheit and bake for 1 hour. A toothpick inserted in the center of the banana bread should come out clean when done.
When done baking, remove the loaf pans from the oven with the oven mitts and place each loaf pan on a cooling rack for about half an hour to cool.
Notes
The 1/2 cup of dark chocolate chips and the 1/2 cup of white chocolate chips used in this recipe is enough for one loaf of banana bread. You will need to double the amount if you want chocolate chips in both loaves.
You can also add about 1 cup of walnuts or raisins, or both, to the banana bread batter right before you put it in the oven.
Powdered sugar icing can be lightly drizzled over the top of banana bread after it is done baking in the oven to give it a little frosting taste.
