A delicious Southern Country Gravy recipe that's quick and easy to make using meat drippings, salt, pepper, cayenne pepper, and garlic powder. Put this gravy on top of pork chops, fried chicken, biscuits, potatoes and more!
Put the meat drippings into a large skillet. We used the grease from pork chops.
Add the flour to the skillet together with the meat drippings. Blend until smooth.
Turn the burner to medium-high heat. Stir constantly until the flour mixture and drippings are lightly browned in color, or the color of your choosing. We made a light brown gravy.
After the flour and fat mixture is brown, add the water and whole milk. Stir constantly. Bring to a boil, then turn the heat to medium.
Add the salt, pepper, cayenne pepper, and garlic powder. You can add any other seasonings you prefer too.
Keep stirring. Simmer until the gravy has thickened to the consistency you desire. It took about 10 minutes total time for our gravy to thicken.
Notes
If you don't have any meat drippings, you can use 1/4 of a cup of oil or unsalted butter, 1/4 cup of flour, and 2 and 1/2 cups of your choice of chicken broth, turkey broth, beef broth, or vegetable broth. Season to taste with salt and pepper and whatever other seasonings you prefer.
No flour? Mix 2 and 1/2 tablespoons of cornstarch with 2 and 1/2 tablespoons of water, and shake it up in a jar, or blend it thoroughly in a bowl. Then add it to the broth you chose, cook on the stove until thickened, and add a couple of pinches of salt and pepper and any other seasonings of your choice.
