A quick and easy-to-make potato salad with eggs and mustard that's full of delicious old-fashioned flavors. Made with only nine ingredients that are probably already in your kitchen - potatoes, salt, hard-boiled eggs, celery, onions, sweet pickle relish, black pepper, mayonnaise, and yellow mustard.
Peel potatoes. Cut into approximately 3/4-inch cubes.
Put potatoes in a pot. Add cold water covering the potatoes about 1-inch.
Turn the burner to high heat. Bring the water to a boil. Add the table salt to the water and stir. Then turn the burner down to medium heat and cook until potatoes are tender, about 14 minutes, stirring occasionally.
Poke the potatoes with a fork or toothpick to check if done. It should slide into the potatoes but not make the potatoes fall apart.
The Eggs, Celery, Onions
Hard-boil the eggs. Cut into slices.
Chop the celery into pieces.
Chop the onions into pieces.
The Dressing
Stir together the hard-boiled eggs, celery, onions, sweet relish, salt, pepper, mayonnaise, and yellow mustard.
Fold the potatoes into the dressing mixture. Be careful not to smash the potatoes.
Put a lid on the potato salad and put it in the refrigerator to chill for a couple of hours before serving.
