These Christmas cookies with M&Ms have crispy edges on the outside and are soft and chewy on the inside. They are loaded with red and green holiday M&M's, mini chocolate chips, and mini milk chocolate M&M's on top.
Put the butter and eggs on the countertop at room temperature for about 10 minutes so the butter can soften and the eggs won't be so cold.
After that, put the butter, light brown sugar, and granulated sugar in a large bowl. Use an electric hand mixer or stand mixer on low speed to cream the ingredients together.
Add the eggs and vanilla extract to the butter and sugar mixture. Blend together.
In a different bowl, add the flour, kosher salt, baking soda, and baking powder. Mix well.
Using the electric mixer on low speed, slowly add the flour mixture a little at a time to the butter and sugar cookie dough mixture. Mix well. Include the sides and the bottom of the bowl during mixing.
Next, fold in the M&M candies and the mini chocolate chips into the cookie dough. Do not use the electric mixer for this step.
Put plastic wrap across the top of the bowl and put it in the refrigerator for at least 2 hours to chill.
Preheat the oven to 375 degrees Fahrenheit just before the cookie dough is done chilling.
Place a sheet of parchment paper on the cookie sheet.
After chilling the cookie dough, scoop out some cookie dough with a cookie scooper, then make a ball.
Fill the cookie sheet with the cookie dough balls about 2 inches apart.
Press some extra M&M's and some mini M&M's on top of the cookie dough balls.
Bake in the oven at 375 degrees Fahrenheit for 10 to 12 minutes. Our cookies were in the oven for 11 minutes.
Let the cookies cool on the cookie sheet for a few minutes, then transfer them to a cooling rack to completely cool.
Notes
One cup of butter equals two sticks of butter.
All ovens may not bake the same. Keep an eye on your cookies towards the end of the mentioned baking time.
You can get a second batch of cookies started while the first batch is baking in the oven.
Do not put the cookie dough balls on a warm or hot cookie sheet.
A slice of bread in the cookie container helps to keep the cookies soft.
