A super moist peach bread recipe on the inside, with a crunchy, crumble topping on the outside. The crumble topping is made with butter, brown sugar, and cinnamon that is baked on top to a golden brown crunch.
Score (cut) a shallow X on the bottom of each peach. Set aside for now.
Boil enough water in a pot to cover the peaches.
When the water comes to a boil, reduce the heat to simmer.
Place the peaches into the pot of water for 20 to 30 seconds. This process helps loosen the skin for easier peeling.
Next, remove the peaches from the hot water and put them into a bowl of ice water for at least a minute. This cools the peaches down for easier handling and stops the cooking process.
After the ice bath, lay the peaches on a paper towel, peel each peach and remove the pit in each one, then dice them. Set aside for now.
Melt in a safe microwaveable bowl the butter in the microwave for 20 seconds.
In a larger bowl, add the melted butter to the cream cheese, and granulated sugar. Mix until it is fluffy.
Add the eggs. Mix.
Add the vanilla extract. Mix
Add the diced peaches. Mix. Set aside for now.
In a different bowl, mix the flour, salt, baking powder, and baking soda.
Slowly mix in the flour mixture with cream cheese and peach mixture. Set aside for now.
Peach Bread Crumble Topping
In a small safe microwaveable bowl, melt the butter in the microwave for 15 seconds.
In a medium-sized bowl, mix the melted butter together with the granulated sugar, brown sugar, and cinnamon.
Slowly mix the flour with the butter, granulated sugar, brown sugar, and cinnamon.
Prepare Loaf Pans and Fill
Spray the loaf pans with cooking spray.
Fill both pans equally with the peach bread batter.
Sprinkle the crumble topping over the top of the peach bread batter for each loaf pan.
Place both loaves of peach bread in the oven and bake at 350 degrees Fahrenheit for one hour. When done, a toothpick inserted in the middle should come out clean.
Notes
Buy fresh peaches that are ripe, soft, yet firm, but not mushy.
You can substitute two cans of peaches if you don't have fresh peaches. Drain the liquid out of the cans of peaches.
A slotted spoon works great to lower the peaches into the hot water and remove them, the hot water will drain out of the spoon back into the pot.
